RECIPE OF THE MONTH--January

Bolognese Bechamel Lasagna

(recipe makes 2-1/2 pans or 1 full pan)

Finito!!! :-) layer inside lasagna-bechamel, bolognese, zucchini, parmesan/romano

INGREDIENTS

bolognese

1/4

c olive oil

1

large onion, finely chopped in food processor

2

large carrots, finely chopped in food processor

4

sm-med celery stalks, finely chopped in food processor

1/4

c butter

1

lb ground pork

1

lb ground beef

 

(Can also use veal)

1/2

c paste

1

c red wine

1

c milk

 

Salt pepper oregano to taste

 

(Dash of cinnamon, optional)

filling and topping

Slice zucchini, round way thinly.

c Parmesan, finely grated

c romano, finely grated

pints Ma's Marinara Sauce

 

Several small basil leaves

Béchamel

1/2

c butter

1

cup flour

2 1/2

c milk

1/8

tsp nutmeg

1

box Lasagne pasta

INSTRUCTIONS

1.

Bring large pot of water to boil at some point before you're done with the Bolognese.

2.

Preheat over to 350°.

Bolognese

1.

In a large saucepan, heat oil add onion, sauté until translucent.

2.

Add butter, sauté carrots and celery for 8-10 mins

3.

Add meats, continue cooking for 20 mins.

4.

Add red wine, simmer 10 mins.

5.

Add milk, continue cooking for 5 mins.

6.

Add paste, simmer 30 mins.

Salt, pepper, oregano. (Dash Cinnamon for a Greek flavor)

1.

Put pasta in boiling water. Cook 1/2 -2/3 amount of time on box. Drain. Put cool water low in pot, put pot in sink, put pasta back in.

Béchamel

1.

Melt butter in small sauce pan on low.

2.

Add flour all at once, use rubber spatchula, mix into paste.

3.

Add milk. Keep stirring until thick. 5 mins.

4.

Add nutmeg.

5.

It should be consistency of oatmeal. Let sit while you get pans ready.

Oil bottom of pans or use 1/4 cup MA's Homemade sauce

7.

1st layer- pasta. Cut pasta to fit. Save pieces to fill in middle layers. Divide Béchamel into 18 portions of about 4 tablespoons each.

8.

Paint a line of Béchamel down the middle of each column of pasta.

9.

Spread the Bolognese (twice the amount of the amount Béchamel) all over the pasta.

10.

Line up zucchini slices in a strip down the pasta columns.

11.

Spread Parmesan over the zucchini slices in a strip down the pasta columns.

12.

Repeat building 2 more rows of pasta, Béchamel, Bolognese, zucchini and parmesan.

13.

Top off with one last row of pasta. Add Ma's tomato sauce across the top, or whatever your favorite marinara sauce and combine with any extra Bolognese you might have. Chop up any extra zucchini and spread all over top. Cut up basil leaves and spread on top.

14.

Optional - spread any extra Parmesan on top.

15.

Bake for 1 hour.
